Pepian Colorado: A stew-like dish made of chicken, cubed potatoes, carrots, guisquiles and cut green beans in a rich sauce of roasted red chiles and tomatoes, roasted pumpkin and sesame seeds and roasted dry chiles. Mildly spicy. Beef or Vegetarian Tacos: Corn Tortillas rolled and stuffed with minced beef and sautéed minced tomatoes and onions and then fried in vegetable oil. The vegetarian tacos are stuffed with a mixture of minced mushrooms. Not spicy. Dulce de Guisquil: A dessert prepared with “guisquiles” which are found in the U.S. and some European countries as “chayote”. Guisquiles are of the squash family and this dessert is prepared by cooking the guisquiles and pureeing them to make a mousse that is then mixed with vanilla, sugar, cinnamon, raisins and slivered roasted almonds.
