Day 1: Monday from 10 a.m to 2 p.m.

  • Enchiladas
  • Chuchitos
  • Buñuelos

Enchiladas: Crispy corn tortillas served with minced beef and a mixture of vegetables called “curtido”, made of thinly sliced beets, carrots, white cabbage, green beans, marinated in olive oil, vinegar, bay leaves and thyme. A vegetarian version would be with the vegetable mixture only. Not spicy.

Chuchitos: A small tamal made of corn flour and a red sauce of dry chiles, tomatoes, onions and garlic, wrapped in corn husks. Not spicy.

Buñuelos: Puffs made of white flour and egg, deep fried in vegetable oil and served with a simple syrup.
